Liquid glucose or glucose syrup is used in the production of a wide variety of products. The main uses of egg albumin are in baking and confectionery, where it is used as a foaming agent, a stabilizer to prepare meringue, milkshakes or as a food supplement for people who practice some sporting activity.
Ingredients: Chicken egg white (min 98%), foam stabilizer: triethyl citrate E1505, acidity regulator (citric acid -330). Instructions for use: Mix the meringue powder with water in a ratio of 1:9 (1 part of albumin and 9 parts of water). 1 kg of albumin powder is equivalent to 316 fresh egg whites of 50 g. Keep in a cool, dry place.
The uses of glycerin extend to the food industry, where it is known as E-422 or glycerol. Due to its diverse properties, it is used as a sweetener, preservative and thickening agent. Where will you find it? In meat products, chewing gum or cocoa. It is even used during the production of organic foods.
Preparation: Preheat the oven to 180°C. For 12 muffins, mix 500 g of the mixture with 220 ml of vegetable oil and 200 ml of water on low speed for 5 minutes, until you obtain a homogeneous dough to which you can add the ingredients of your choice. Pour the batter into paper muffin tins and bake in the oven for about 25 minutes until golden brown.
